This was one of my first meal prepping recipes. Can you believe I used to never eat breakfast? Now I can’t function without it!! This is a perfect Holiday breakfast or Family meal prep! It’s delicious fresh and re-heated.

Prep Time: 30 min    Cook Time: 45 min   Servings: 9-12

Ingredients

1 Pack of Bacon

16 oz Italian Sausage

12 Eggs

8 oz Mexican Cheese

26 oz Hashbrowns Frozen or Freshly Shredded.

2 oz Spinach, Frozen. Or two handfuls of Fresh Spinach.

1 tsp. Salt

1 tsp. Black Pepper

1/2 Tbsp. Italian Seasoning

Directions

  1. Pre-heat oven to 400° F

  2. Cook Bacon, and chop

  3. Cook Italian Sausage

  4. Mix Bacon, Sausage, Hashbrowns, Spinach, and half the bag of Cheese in a bowl.

  5. Put the mixture in a 9x12 Glass or Ceramic dish.

  6. Mix the 12 Eggs in a bowl with the seasonings.

  7. Pour Eggs into the dish and top with the remainder of the Cheese.

  8. Bake for 45 minutes covered then 10 minutes uncovered.

  9. Let cool then Serve.

Notes:

If you use a metal dish, take about 5-10 minutes off the cooking time. This is a great dish for a holiday breakfast or a big family get-together. For your first-time baking, keep an eye on it. Every oven is different and some cook faster than others.
