Buffalo Chicken Dip

This recipe came after having my mom’s Buffalo Chicken Dip, but I wanted to make a version with Non-Toxic ingredients. You can still have good food and make it healthy!

Prep Time: 5 min    Cook Time: 20 min    Servings: 2-3

Ingredients

1 Rotisserie Chicken or 2 Chicken Breasts

8 oz. Softened Cream Cheese (I used Good Culture)

1/2 cup Buffalo Sauce (I used Primal Kitchens Original Sauce)

1 cup of Mexican Cheese

1/2 tsp. Onion Powder

1/2 tsp. Garlic Powder

1/4 tsp. Salt

1/2 tsp. Black Pepper

1 tsp. Parsley

1/4 tsp. Dill

Green Onions

1/3 cup Frozen/Cooked Spinach (Optional)

Directions

  1. Preheat oven to 350° F

  2. Chop Chicken to fine pieces (For easy scooping) and set aside.

  3. In a bowl add Spices, Cream Cheese, Buffalo Sauce, and 1/2 cup of Mexican Cheese and mix.

  4. Add in the chopped Chicken, Mix, and put in a baking dish (8x8 or 9x9).

  5. Top with the remainder of Mexican Cheese and bake for 20 mins.

  6. Let cool. Top with Green Onions and serve with your favorite snacks! Enjoy!

Notes:

Rotisserie Chickens and Chicken Breasts vary in size. This should be a creamy recipe so if it is too dry 1.5-2x the recipe until you receive your desired results.

Serve as a dip with your choice of Tortilla Chips, Pita Chips, Cucumbers, Bell Peppers etc. Topping with Parsley, Green Onions, and Feta will all pair well with this. You can use the seasonings above or use your own Ranch Seasoning. If you purchase one, I recommend Clean Monday Meals Ranch Seasoning. You can use ½ Tbsp or 1 Tbsp depending on how much flavor you want.

Want this is as a Crockpot meal? Easy! Add all ingredients to a Crockpot, put on med-high until everything is easily combined then leave on low-warm to serve.
